GreenPan Valencia Pro 12-Inch Frypan Review: Would Owners Buy It Again?

How this review was made: We did not test this pan in person. This verdict is based on our analysis of expert tests and owner themes, all listed at the end of this article. We looked hard for evidence that it should be skipped, and explain below why we did not reach that verdict. Our method.

Depends

Among the best ceramic pans, but the coating is not forever

In America's Test Kitchen testing, this pan was the top pick among 12-inch ceramic nonstick skillets and one of only three to pass a long egg durability test, while most ceramic pans failed. Other sources agree it is very slick out of the box. But every source also notes that ceramic nonstick fades with use, buyer-review summaries flag coating loss as the main complaint, and the maker backs the coating for only two years. It is a good pick if you accept it as a replaceable pan with careful habits.

Buy it again if you…

  • want a PTFE-free nonstick pan for everyday eggs and fish
  • will hand wash, use medium heat and avoid cooking sprays
  • accept replacing a nonstick pan every few years

Skip it if you…

  • want a pan to last for decades
  • cook at high heat or sear a lot
  • put pans in the dishwasher and use metal utensils

The GreenPan Valencia Pro is a hard-anodized aluminum frypan with a ceramic (Thermolon) nonstick coating that is free of PTFE, PFOA and PFAS. It is induction compatible and rated oven safe to a high temperature, according to America's Test Kitchen.

It is a popular pick, and ceramic coatings have a reputation for wearing out. We checked expert tests, buyer-review summaries and legal records to see whether that reputation is deserved here.

What testers and owners love

It is genuinely slick at first.America's Test Kitchen said it arrived slick and stayed so through cooking and abuse tests, and Taste of Home reported eggs, salmon and cheesy shakshuka releasing easily.
Better than most ceramic rivals. In the ATK 12-inch lineup it was the overall winner, while seven other brands were not recommended.
Even heating, easy cleanup.AmazingRibs describes very even heating and residue sliding off with a swipe, and little oil is needed.

What owners complain about

The coating loses its release.Looria's summary of reviews names loss of nonstick performance over time as the main durability concern, and about 3 of 7 reviewers it summarized were disappointed with nonstick results.
Fussy care.Taste of Home notes the maker advises hand washing, medium heat and avoiding spray oils. AmazingRibs also says abrasives and stacking cause scratches that make food stick.
Runs hot.ATK found it heats hotter than a typical nonstick pan, so you may need lower heat or shorter cook times.

How it holds up over time

This is the honest question for any ceramic pan. ATK says brittle ceramic develops microscopic cracks so food sticks more over time, and that most ceramic pans in its tests degraded. This one resisted best, but a Taste of Home writer using a Valencia Pro set daily since early 2022 says the nonstick fades a little over time, although it has held up better than her older PTFE pans. We found no multi-year lab data and no frequent reports of sudden failure, so we treat the wear as gradual rather than a defect.

A note on the marketing

A 2019 class action alleged that GreenPan advertising such as "toxin free" and "healthy ceramic non-stick" was misleading. According to Truth in Advertising, the named plaintiff settled and the case was voluntarily dismissed in December 2020 with undisclosed terms. These were allegations, not findings, and the case did not concern wear. We mention it because it is worth reading health slogans on any pan skeptically.

Tips from owners and testers

  • Use a little butter or oil, not aerosol cooking spray.
  • Keep heat at medium and let the pan warm gently.
  • Hand wash with a soft sponge and avoid stacking pans.
  • Keep it for eggs and delicate foods and use another pan for searing.
